Banana Honey Cake.


Try this moist banana cake to improve digestion and bowel function.  So simple and easy to make. Tastes good and can also help people suffering from constipation.

 

Ingredients
2 Large organic free range eggs
¾ cup organic honey
¼ cup milk (goat’s milk, oat milk, rice milk)
1/3 cup extra virgin olive oil
½ cup goat’s yogurt
1 cup wholemeal spelt flour
½ tsp cinnamon
½ tsp fresh ginger
½ tsp sea salt
1 tsp bi-carb soda
1 ¾ cup unbleached spelt
½ tsp vanilla
2 mashed lady finger bananas

Method
Mix all wet ingredients together well.  Add dry to wet.  Pour into oiled cake tin and cover with foil.  Bake at 200°C for 60 minutes.  Test relative moisture with a toothpick.
